Mimi Pink Rosé Sparkling

MimiPink-V

Non Vintage Sparkling Mimi Pink is a delicate Sparkling Wine with persistent bubbles, a good balance of acidity and a bouquet of natural fruits. A natural second fermentation has created subtle toasted bread characters.

A wine to be enjoyed anytime with good friends.

Salmon pink in colour, with a persistent mousse and fine bead. Clean and vibrant aroma of strawberry, vanilla and apple blossom. The palate is delicate with a good acid sugar balance, nice depth of flavour and a pleasant fruity persistence.

“Fleshy, pale and delicate, this stunning sparkler boasts persistent, creamy bead, toasted brioche and nutty notes and a beautiful berry brulee texture on the finish. Its one of the best value sparkling wines on the market. “Sophisticated, elegant, lovely as a celebratory glass or for Valentines Day,” said Jane. “Bring on the oysters!” “

“Light Rosé blush; a pretty colour. Slightly smoky and reductive on the nose; earthy and savoury. A touch of apple with bright acid.”

“Ballet shoe-pink in colour and boasting lovely almond, craisin and berry brioche complexity, our judges were well and truly wowed by this wine. The mouthfeel is very generous, seductively creamy even, all flowing to a silky-fresh finish. This is a very well made wine with delicacy and elegance that represents incredible value for money and is, according to Jane Boyle, “very very classy”.
“It’s pink, bubbly and tastes like strawberry and cream. What’s not to like?” asks Will Shields, winemaker for Leveret Estate, which produces Mimi. “I also like that its styling is unpretentious, while knowing the superb quality fruit and attention to detail that went into its making.” He’s absolutely chuffed with their top placing. “I tasted it just the other day and thought man, that’s tasting good – and then we get the call from you guys, which is awesome!”
The Mimi Pink is crafted from pinot noir that is a little riper than what Leveret would use for its Brut styles, “…though not nearly as ripe as what we would pick for red wine,” adds Will.“With the extra ripeness we get more strawberry-like characters, which is a great combination with the creamy yeast autolysis flavours and textures. There’s also a hefty whack of chardonnay in there, boosting the fruit-character. Sweetness is at about 18g/L which really suits the style.”
