Full bodied, it bursts with notes of black fruits, blueberry, plum, chocolate, and cassis on a bed of lovely refined tannins, yielding a distinguished and silky smooth wine.

    This distinguished single vineyard Cabernet Merlot is made from ultra-premium grapes (87% Cabernet Sauvignon, 13% Merlot) grown on low-yielding vines in the celebrated stony soils of the Gimblett Gravels district in Hawke's Bay. The 2018 growing season experienced ideal weather conditions. Steady hot days and moderate-cool nights allowed for perfect ripening conditions for harvesting in excellent condition.

    Handpicking of the Merlot began on 23 March, with the Cabernet Sauvignon enjoying a longer hang time coming into the winery on 10th April. The grapes were destemmed, retaining whole berries, before transferring to open top fermenters as separate parcels for a 3 day average cold-soak.

    A selected yeast was inoculated to initiate fermentation of the Merlot parcel, while naturally present indigenous yeasts were allowed to initiate fermentation of the Cabernet Sauvignon parcel. All fermentations were undertaken in open-top tanks, with the cap plunged twice daily for colour, flavour and fine tannin extraction. A post-ferment maceration regime over an average of 10 days optimised the tannin structure prior to the wine being pressed off its skins.

    The wine was then transferred to quality French hogsheads (63% new oak) for 16 months aging, with minimal aeration or racking throughout. The blend proportions were then judiciously assembled from selected barrels, gravity-settled, requiring only a light coarse pad filtration to polish the final wine - preserving the full natural complexity, structure and flavour profile. Bottling took place on 10 September 2019 under Stelvin screwcap.
