A quick note on the term, méthode traditionnelle. This is the process used in the Champagne region of France to produce Champagne and we are one of the original méthode traditionnelle houses of New Zealand. We often take the old and the new and innovate, but we also don’t fix what’s not broken and so we adopted this labour-intensive, but rewarding method to bring our wine drinkers a line of refined, high-quality sparkles.
