This refined sparkling wine was made in the time-honoured 'methode traditionnelle' style, exuding a delightful array of fresh apricot, cashew, honey and freshly baked bread aromas. The palate is wonderfully creamy with soft rounded acidity and delicate fruit sweetness of marmalade and vanilla wine biscuit, intertwined with a fine mousse and delicious breadiness, culminating in a satisfyingly persistent off-dry honeyed finish.

"Golden hued appearance leads to aromas of a fully developed toasty, nutty and expressive bouquet. Peach and apricot, baked apple and a fully developed autolysis. Full-bodied on the palate, rich in flavour and texture with an equally full and richly textured mousse. Flavours of stone fruits and citrus, a fine mineral layer, brioche baked goods. Delicious and ready to drink from today and through 2025."

Food Pairings

Vineyards and Winemaking

Crafted in the traditional way, the base wine was fermented in seasoned oak barrels, with frequent battonage for a year before being transferred to pressure tested Sparkling wine bottles.

A secondary fermentation was initiated in bottle to create the fine mousse (bubbles). The wine was then aged on yeast lees in situ, with frequent turning to allow its rich flavours to develop. After several years the autolysis characters added to the intense developed palate weight. This was followed by disgorging the yeast lees, and topped with a refined liqueur, before finally closing with a cork.
