A delicate and beautifully balanced sparkling wine, inspired by the natural harmony of Cathedral Cove. Its radiant gold hue reflects the sun shimmering across the Cove’s turquoise waters — a prelude to the elegance within. Aromas of stone fruit and freshly baked biscuit rise like a gentle sea breeze, while extended lees aging imparts rich, yeasty complexity.
On the palate, layers of ripe stone fruit unfold over a creamy mousse, reminiscent of frothy waves meeting the shore. A hint of sweetness is perfectly balanced by a crisp, refreshing acidity, finishing long, dry, and luminous — like the last golden light over the sea.

    Vineyards and Winemaking

    The grapes for this wine were harvested and transported to our Riverview winery. The fruit was pressed into stainless steel, settled, racked and transported to our Katikati winery for fermentation. The juice was inoculated with Sparkling specific yeast strains. Following fermentation, the wine was inoculated for Malolactic fermentation. The wine was kept on yeast lees for approximately a year with regular stirring to maintain yeast viability for as long as possible. Following blending, the wine was tirage bottled for secondary fermentation. The bottles were held for a minimum of 24 months of maturation on lees and are disgorged as required.
