Reserve wines are from low-yielding vines producing superior grapes showing intense fruit flavours and pure varietal expression. The winemaking philosophy is to achieve “balance” of flavour, structure and texture.

Wine Review

Ripe, varietal and fruity bouquet with aromas of plums and red berry fruits, a seam of steely minerality then violet and clay follow. Nice weight and tension on the palate with moderately firm tannins, plenty of acidity and a balanced, even finish. There’s a tartness to the finish before the core fruit flavours fold back in again. Overall well made and ready to drink alongside food. Ideal drinking from mid to late 2025 through 2028.

Food Pairings

This wine can be enjoyed with Venison, plum sauce and purple potatoes.

Vineyards and Winemaking

The grapes were gently crushed, allowing some whole berries to remain intact, with the resulting must then transferred into open-top fermenters for a 3-day cold soak. Each vineyard parcel was kept separate. Fermentation proceeded with daily air rummage of the cap for colour, flavour and fine tannin extraction. The resulting wines were racked once and aged for 12 months in quality French oak 300L hogsheads (23.5% new wood). After rigorous blending trials to achieve the precise balance and flavour, the wine was lightly fined, filtered and bottled on the 31st May 2023.
